today, mairead and I made christmas cookies and listened to christmas music on the radio. and it snowed. yay birth of jesus.
we made oatmeal chocolate chip (standard) and these absolutely awful ones that mairead’s family appropriately calls Fat Bars.
they involve lining a baking pan with aluminum foil, spreading a sleeve of saltines in the pan (no overlap!), and then making a toffee (boil 2 sticks of butter, add 1 cup of sugar, boil some more) and pouring the toffee over the saltines (spread for even coverage). then you bake it at 350 for 15 minutes, cover with chocolate chips (spread with a knife as they melt) and then some slivered almonds. cool in the fridge.
they are quite tasty. though I recommend if you make them to give them away to someone as quickly as possible (addictive and guilt-causing!).
note to self: going to the YMCA in the afternoon after only eating cookies all day, not a good idea.
